64. Enzymic Decomposition of Amino-sugars

CONTINUING the study of the biochemical properties of cartilage and of other tissues which make up the joint [Lutwak-Mann, 1940, 1], experiments were carried out with chondroitin and mucoitin sulphuric acids, both of which occur in joint tissues (cartilage, tendons, mucous membranes). However, preliminary experiments have shown that comparatively little progress could be made in this field unless more information was available about the components of these complex substances and in particular, about the amino-sugars; In this paper results are given which describe the behaviour of amino-sugars under the influence of enzymes in animal tissues, yeast and bacteria. A preliminary account was given to the Biochemical Society [Lutwak-Mann, 1940, 2].
